Roadside food, Vietnam

Food in Vietnam is a feast in its own right. Delicious, inviting and colorful. Based around rice and soya sauce, they use little oil but plenty of vegetables. From their trademark Pho soup to noodles to beef and duck to freshwater and sea fish to shrimps and squid they are all best prepared, served and eaten at your local corner stall. Fresh and savoury they are better than anything. With a drop of “nuoc mam” or fish sauce, lime, mint and basil they form a feast that is hard to match
